This is the hind limb of the pig. In addition to the advantages and peculiarities of the Iberian breed, the pigs are reared in semi-freedom on large pastures. This allows them to exercise their muscles. One of the differences with acorn-fed Iberian ham is that the pig has not eaten a sufficient number of acorns and because of its “montanera”, it is called “cebo de campo”. Nevertheless, it is a meat with an intense flavour and many nuances.

Feeding of the animal
The feed is based on high quality feed in perfect condition for the pig’s development, so that the pig’s growth is healthy and with a lot of activity in its development. The control of the feeding rhythm is exhaustive in order to obtain an excellent ham of the highest quality.
