This is the hind limb of the pig. In addition to the advantages and peculiarities of the Iberian breed, the pigs are reared in semi-freedom on large pastures. This allows them to exercise their muscles. One of the differences with acorn-fed Iberian ham is that the pig has not eaten a sufficient number of acorns and because of its “montanera”, it is called “cebo de campo”. Nevertheless, it is a meat with an intense flavour and many nuances.
